Lemon Garlic Grilled Shrimp
This is it. The final push. One last final and you’re in the clear. You’ve slept 4 hours every night for a week. Existence starts to get hazy. And all you can do is still stare blankly at your macro economic textbook. If 50 Cent can learn economics from the street, why can’t you just tell your professor the same?
At 3 in the morning, you lose all grip with reality. Suddenly you are transported to a Caribbean island, on a catamaran with a couple girls you met at your resort and 5 buckets of coronas. Could this illusion be real? Are you on winter break?
Snap back to reality and you’re still staring at some made up graphs about the economy that clearly hasn’t solved anything, especially student debt. Just like in Inception, that one thought of hope remains. The same hope that keeps Leo going when he keeps losing Oscars. Winter break. Vacation. Jamaica. Your parents paying for everything while you get tanked with the other college kids from your resort in the sun.
Sometimes we just need to taste a little hope. Luckily, you’ve had shrimp in the freezer all semester. Time to defrost them and have a little ocean experience. Light up the tiki torches and fire up the grill. Time to make some lemon garlic shrimp to remind you where you’ll be in a week. Just one more test…
1 pound of shrimp
1 Tablespoon of vegetable oil
1 Tablespoon of lemon juice or 1 fresh squeezed lemon
2 cloves of garlic minced
1 Tablespoon of parsley
Salt and pepper
4. Preheat the grill to high heat. You can also grill the shrimp on a George Forman.
5. Place shrimp on and let cook for 2 minutes a side. Serve with Broke Black Beans and Rice.
6. Finally give up on studying and just wing the damn test.
