Buffalo Chicken and Avocado Quesadillas
It’s Friday afternoon and due to a series of life perspective altering events, you are sitting in class for the first time ever on Friday. You had a rough bender last weekend and after talking to your parents and noticing your BAC average is consistently higher than your GPA, you decided it time to turn over a new leaf. And that leaf is going to class.
Well you didn’t realize it would be this miserable. The clock seemingly hasn’t moved at all. There’s that one insufferable know-it-all asking fake questions to appear smarter than the rest of class. What kind of cruel world is this that there is supposed to be class on a Friday? Fridays are supposed to be spent recovering from your hang over from Thursday then developing a new one from all the drinking you’re going to do.
The clock finally strikes 5 and you decide you need a drink or 7 for all you have accomplished in class, like picking up Mark Sanchez off the waivers for fantasy. You debate stealing the know-it-alls bike from class to get to the bar faster. You don’t know if he actually owns a bike, but then again how could he not? Still, you hustle down to your favorite watering hole. Unsurprisingly, all your friends have been there for hours even though you were all supposed to be in the same class.
A couple Bud Heavys in, you start get that unholy craving for some bar food. Since you’ve seen the lacrosse team literally pee on the floor by the kitchen, it might be best to order something pretty straight forward. But it’s got to have buffalo sauce. Everything good at the bar is drenched in buffalo sauce.
Flash forward a couple hours and you’re looking for some more. Well luckily here’s a recipe to make your own buffalo chicken and avocado quesadillas. Quesadillas are one of the easiest snacks to make, so why not make it a meal? Add some buffalo chicken, onions, and avocado and shamelessly devour it down. Everything’s better with some melted cheese and some buffalo sauce. Except for sitting in class on a Friday…
1 chicken cutlet, cooked and shredded
shredded cheddar cheese
shredded mozzarella cheese
1 avocado, cut in long pieces
1/4 of a red onion
1 teaspoon of oil
1 Tablespoon of franks hot sauce
1/2 Tablespoon of butter
Game Day Salsa for topping
1. Begin by cooking the chicken on the grill. You can use something like Cajun Grilled Chicken for extra flavor. After cut up the chicken into pieces or rip it with your hand so it’s small and shredded. Cut with the grain lines of the chicken.
5. When the cheese starts to melt add all of the other ingredients and drizzle with the buffalo sauce. Use the end with out anything on it to cover the top of the quesadilla. Wait about 30 seconds and carefully flip it. Let cook 1 more minute and then remove.
