Seafood Fra Diavolo
There is a 98% chance that most college students would starve to death if pasta didn’t exist. Besides beer being our main source of calories, pasta is the fastest and cheapest way to have a quick meal. But having the same pasta with tomato sauce gets old faster then a Fiji party with the lights on. It’s time to spice it up. Frozen seafood is inexpensive and very easy to prepare. Combine that with a homemade Fra Diavolo sauce and you have a dish that would even get an approval from a Phi Sig girl. Invite one of them over to share and maybe you’ll get asked to Phi Sig formal, even though you’ve already been blacklisted. Twice.
Ingredients:
1/2 box of linguini pasta
3 Tablespoons of good olive oil
4 cloves of garlic
1 small yellow onion chopped finely
1 14.5 oz can of finely diced tomatoes drained
1 Tablespoon of dried oregano
1 Tablespoon of shredded fresh basil
2 teaspoons of crushed red pepper
1/2 pound of frozen seafood
grated parmesan cheese for topping
Cooking:
1. In a large pan, begin by sautéing the garlic and onions in the olive oil. Cook for 3 minutes on a medium heat or until garlic is brown and onions are soft.
2. Add the tomatoes, oregano, basil, and red pepper and turn the heat down to a simmer. Stir occasionally and let simmer for 20 minutes.
3. While your sauce is simmering, begin boiling water and cook your pasta for the time directed on the box.
4. In another pan heat up a Tablespoon of oil in a pan on medium heat and add the seafood. If the seafood is not defrosted, run it under cold water for 5 minutes in a strainer. Cook in the pan for 2 minutes.
5. Combine all of the ingredients in the sauce pan. Serve and top with parmesan cheese.
6. Get kicked out of Phi Sig formal for a third time by swimming in the fountain…again.
