Broke Black Beans

It’s that point of the semester again…the funds are running low. By low, I mean $24.30 is left in your checking account. Instead of having to make the monthly call to the parents for money, try making black beans like a normal poor college student. This easy recipe is delicious and goes well with fajitas or as a topping on nearly any food. Hey, on the plus side black beans are good for you…apparently.

Ingredients:

16 oz can of black beans
1 Tablespoon of oil
1/2 of a medium sized onion chopped finely
3 cloves of garlic minced
1 teaspoon of ground cumin
1/2 teaspoon of cayenne pepper
1 teaspoon of garlic powder
1 teaspoon of paprika
1 teaspoon of onion powder

Cooking:

1. In a medium pot, heat up the oil and begin to sauté the onions and garlic on medium heat. Sauté for 3 minutes or until onions are soft and garlic is golden brown.

2. Drain the black beans of most of the liquid and pour into the pot with the garlic and onions. Add all of the spices.

3. Lower the heat and let the beans simmer for 5 minutes.

4. Eat your one meal of the day and spend remainder of your bank account at the bar.
